SIMPLE PASTA
Ingredients:
- 3 eggs
- 2.5 cups of all purpose flour
- 1 t. salt
Directions:
- Combine the flour and salt into a medium-sized bowl.
- Whisk the eggs together and pour into flour mixture.
- Mix until dough ball forms.
- Remove from bowl and knead on a floured surface until dough is elastic and smooth.
- Form into a ball, wrap tightly with plastic wrap.
- Place in refrigerator to rest for at least 2 hours.
- Remove from cooler, slice dough into 1/2 inch slices.
- With a rolling pin roll out to 1/16th of an inch thickness on a lightly floured surface, then cut into strips.
- Cook in boiling salted water until tender, drain.
